I haven't updated this section of the blog for a while, mostly because I have been busy. I play soccer for the Edinburgh team, and we practice and have games most weeks. I have also started horse riding here again - I ride Icelandic horses twice a week. I run or go to the gym most days when I don't have riding or soccer, and I also have all my school work to do, as well as keeping up the other sections of this blog. So, the cooking page suffers for it.
To make up for the lack of activity here, I have decided to add in a few of the meals I've cooked in the past few months.
1. Salmon, rice, and zucchini
I like this meal because it is easy, quick, and delicious. Just cook the salmon in the oven for about 20 minutes (while the rice cooks) and then fry up some zucchini on the stove in a little bit of oil. Toast almonds and add those + raisins or dried apricots to the rice, put it all on a plate, add a drizzle of creme fraiche - watercress sauce to the salmon, and voila. Done.
2. Stir Fry
This is also pretty easy. I just steamed the udon noodles, toasted the broccoli and tofu in a pan along with butter and onions, mixed up a soy sauce, ginger, vinegar, and honey sauce, and put it all together in a pan to heat for a while. Garnish with toasted almonds and sesame seeds.
3. Chili (non spice) and garlic bread
This is another fairly easy meal. I cut up bread slices, spread some butter on them, and sprinkled each with chopped garlic. Then put them in the oven on low to crisp up.
Meanwhile cook some ground beef. Put that, corn, chopped carrots, and beans in a pot with some chicken stock and let it simmer until the vegetables are soft. Then, serve it with the bread and sprinkle both with cheese to taste
