It is fall here in Edinburgh, and quickly becoming winter. To get into the spirit of the season, I bought three cans of pumpkin puree with which to make pumpkin bread, using my mom's recipe. After having made three loaves, the first of which was with a different recipe and didn't turn out very well, I still had cans of pumpkin left, so moved on to make another pumpkiny meal: pumpkin pancakes. These are so easy to make, and delicious!
Here's how you do it:
Mix these wet ingredients together in a big bowl:
-1/4 cup pumpkin puree
-2 Tbs milk
-3 eggs
-1/2 tsp vanilla
-1/2 Tbs vegetable oil
-1/2 Tbs honey
And mix these dry ingredients in a small bowl:
-1/4 cup flour
-1 tsp baking soda
-1/4 tsp salt
-1/2-1 teaspoon cinnamon, to taste
Combine the wet with the dry and fry them up on a griddle or a pan just as you would any pancake, and enjoy!
