Fresh Pesto
When I decided to plant basil, I went full on and planted 200 seedlings…in retrospect obviously this is way too much basil, but at the time I for some reason imagined only a few would grow. Anyway, I was very wrong and now have tons and tons of basil. So, I have had to get creative. We have been putting basil in our salad, I made lemon and basil shortbread cookies, and now I have decided to finally make pesto. I made a vegan pesto, purely because we didn’t have cheese, with peanuts and fresh lemon, and I have to say it is one of the best pestos I have had. Maybe because it is so fresh?
