Lemon Cake
It’s coming into spring here, which means that it is quite windy and cool - nice weather. Today, there was a bit of rain in the morning, so I decided it was the perfect day to try out a new lemon cake recipe.
I found a recipe online and altered it a bit, adding about half the amount of sugar in the recipe and throwing in a few drops of vanilla and orange essences. The batter is full of fresh lemon juice and lemon zest.
I made a lemon syrup to pour over the top while it was baking, and will test it out after teaching today! We don’t have a bundt pan, so I had to use a baking pan instead.
